These are also great for a snack. High fiber and great for kids after school.

In cuisinart combine and blend until somewhat smooth:

1cup chopped pitted dates (before you start, cover dates w/the 1/4c hot water and let sit for 15 min until softened

¼ c. hot water (see above)

½ c. unsweetened applesauce (one small snack size is perfect) or 1 small banana

1/2c canned or fresh baked pumpkin or crushed pineapple or grated apple

1/2 of med orange diced with peel

1T cider vinegar (I like the flavored balsamic like lemon)

3/4c soy or almond beverage

2 T flaxseed meal

6 T water

Set aside.

In a large bowl blend:

3/4c   oatmeal that has first been ground in cuisinart into a flour.

1c whole wheat flour (I also like rye flour instead)

1/2c almond flour

1/2c unsweetened shredded coconut

1t  baking powder

2 teaspoons baking soda

¼ teaspoon of each ground ginger, nutmeg,cloves or 1 teaspoon pumpkin pie spice

1 teaspoon cinnamon

½ teaspoon salt

1 medium zucchini grated

  1. medium carrot grated

1/2c chopped walnuts

Pour liquid ingredients into dry and blend gently until just mixed.

Lightly spray a 12 cup and a 6 c muffin tin with baking  spray.

Fill cups 2/3 full. Bake 350 for 25-30 min. Can be still soft on inside but let sit until cool.
