Spread a large spinach tortilla with hummus.
Dice ½ peeled cucumber and 1 small tomato
Mix a little oil and vinegar with the cucumber and tomato.
You can also add diced red pepper, parsley or basil.
Lay some spinach leaves or lettuce over hummus and then diced vegetables. Fold half of tortilla 2/3 way and then roll up rest of way. Slice in half. Serve w/ pea soup and croutons. Note: I usually bring home the great bread they serve at restaurants instead of eating it. At home I dice up, bake w/garlic salt and a few sprits of the canned oil spray. I keep in freezer for soup later.
