Utensils: food processor. I think it is important to mix up the ingredients to a mash so you can form the meatballs easier. No particular order. Shredded or blended with blade of cuisinart.
3c. chopped fine crimini or button mushrooms
2c. cooked quinoa. (In instant pot combine 1c water and 1c quinoa. Cook at zero)
1c ground oatmeal into flour.
1c. chopped fine walnuts
1c. chopped parsley
2T. fresh thyme
1/2t. salt
1t. pepper
3 T ground flaxseed meal
1T horseradish
2 carrots shredded
2 cloves garlic
1 small onion minced
1 small zucchini grated
2T. egg replacer mixed with 6T. water
Shred and chop everything in a cuisinart with metal blade. You can mix some of ingredients together and then scrape into large mixing bowl. Roll into balls or use ice cream scoop with ejecting wand and place on a parchment lined baking sheet. Rolling each meatball in crumbs is an option. It might keep moisture in. Bake in a 350 degree oven for 30min.
I served with zucchini and tomatoes from garden. Made red potatoes and a simple cucumber salad.
CURRY GRAVY
Combine following ingredients with a whisk in small bowl and then heat in skillet on med. heat until fragrant (you will smell the spices). 5 min.
¼ small minced onion
2 cloves garlic minced
1/2t. honey
1t. ginger ( if you grate ginger on a grater. Put in small piece of cheesecloth. Then twist chesecloth until all the juice comes out of grated ginger)
½ of lemon juiced and include zest of rind
1/2t. red pepper flakes (gives it some kick)
1T. curry powder
2T. Braggs Aminos (like soy sauce)
Once mixture is heated and fragrant, add
1 can lite coconut milk. Heat until thicker. If you want thicker do below.
1T of arrowroot into coconut milk first before adding to hot. Do not overcook arrowroot as it is not exactly like cornstarch and can become elastic. Cook just til thick .
