3c. dried beans (pinto, cranberry, kidney or your choice) Do not need to soak
2t sea salt
1 red onion chopped
2 med green bell pepper chopped
1T. dried oregano
1/2c beer or vegetable broth
1T spanish paprika
1T ground cumin
2 cloves garlic minced
2 dried chiles in adobo sauce minced (comes in a can)
1T brown sugar
There are recipes that have you cook this or that first, but I put all in the dutch oven, cover with water til 1″ above. Bring to a boil then lower to med heat, cover and cook for about an hour. If rapidly boiling still when you turn to med, lower to med low where there is a nice simmer. Test beans to soft but not too hard consistency. Cook a little longer if hard. Note: Beans can be made in instant pot.
When cooked, add one 15oz can diced and juice of ½ of a valencia orange (they are juice oranges)
