i grew up eating and making a lot of apple pie, I’ve never lost my appetite for apples and cinnamon baked in sauce with crumbly topping

6-7 whole green granny smith apples

1t. lemon juice

1/4c. raisins

2c. water

1t. vanilla

2T arrowroot  (I like instead of cornstarch)

1/2c. chopped dates

1T maple syrup or brown sugar

Peel,quarter and slice apples into 1/4″ slices into a med. size bowl. Stir arrowroot into cold water to dissolve in separate measuring cup. Add water mix and remaining ingredients into bowl with apples and blend. Pour into a 9x9 baking pan.

Sprinkle crumbled mixture on top of apples.

Crumb Mixture

In cuisinart add:

1/2c. oatmeal

1/2c pitted sliced whole dates

1/4c. all purpose flour

1/4t cinnamon

1/4c coconut

1/4c walnuts

Add 2t olive oil so it binds.

Blend until small pea size crumbles or finer. Sprinkle over apples. Bake 350 covered with foil for 45min. Serve plain or with soy ice cream.
