1 1/4c date paste  (Soak 8 chopped Medool dates in just enough boiling water to cover. Let sit for an hour.

1 l5oz can ( just 1 oz under 2c.) drained and rinsed black beans (I make my own black beans in instant pot to avoid added sodium from canned)

1 small chopped cooked peeled beet

½ med chopped orange with rind

1/2c   cocoa powder

3/4c. unsweetened soy or nut beverage. I use the water from soaked dated to make up some of the 3/4c.

2T. flaxseed meal (hopefully you grind flax seeds once a week and keep in fridge for baking and adding to food)

1.5 t. baking powder

1/2t. baking soda

1t. almond extract

3/4c old fashioned rolled oats ground into flour consistency

Set Oven 350. Process all ingredients but oats in food processor (not vitamix) til smooth. Spoon into mixing bowl. Process oats. Gently fold into wet ingredients. Spread into 9x9 silicone pan or make cupcakes. I very lightly spray with a PAM type spray. Bake 30 min. Feel center for a somewhat dry feel that does not sink in, They are good slightly moist in center. If you would like frosting, mix in a small cuisinart:

4 chopped Medool dates

1T. cocoa powder

2T nut butter (I grind my own peanuts)

add just enough soy or nut beverage to smooth consistency, I can add to top of cuisinart slowly til I get spreadable consistency.
